Ingredients for two sandiches

  • 6 slices of Vollkorn Triangle 750 g
  • 200 g smoked salmon
  • 1 red onion
  • 1 romaine lettuce heart
  • 40 g dried tomatoes
  • 1 apple
  • 1 lemon
  • mascarpone
  • 40 g Comté
  • 20 g chopped pistachios
  • 20 g butter

Method

  • Cut the bread into thin slices, butter them and put in the oven for 4 minutes at 200°C.
  • Prepare the Comté crisps by placing 1 mm-thick slices of cheese on a baking tray.
  • Put in the oven at 150°C for 10 minutes, until the cheese becomes crispy.
  • Prepare the apple-lemon dip by boiling the peeled apples until soft.
  • Mix the apple purée with the mascarpone, lemon zest, a little black pepper and the
    pistachios.
  • Prepare the other ingredients by cutting the lettuce, avocado, red onion, tomatoes
    and smoked salmon.

Making the sandwich

  • Put the salmon, Comté crisps, lettuce, apple-lemon sauce, onion and dried tomatoes on the first slice of bread.
  • Add a second slice of bread and repeat with salmon, sauce and a Comté crisp.
  • Close the sandwich, then add a drizzle of sauce, a slice of salmon, avocado and a
    crisp.
